If you’re looking for the easiest dinner in the world, just stop. This is it!! I know what 70% of you are thinking.

…but I don’t like tuna.

I know, I know. It’s not for everyone, but the good news is you can sub it for any other meat/protein you’d like and it’ll still be soo tasty!

This recipe was birthed on one of those evenings when I just did NOT feel like cooking, we had a random hodge podge of ingredients laying around, and I was feeling a little fiesta-y. Fiesta-y like I needed something with a little bit of flare. So, lo and behold, the Ten Minute Tuna Tostada was created!

I would argue (for the non tuna lovers) that you can’t even taste the tuna with all the other yummy additions but then I’m sure you would argue back that it’s not true. Let’s just stop there and agree to disagree.

But seriously, it’s recipes like these that made my husband start to like tuna. We have a favorite go to dish that for lack of a better title we call Tuna Guacamole. Basically it’s a can of tuna, chopped tomatoes, chopped avocado, some onion, black beans, lime juice, and spices that we scoop up and eat with tortilla chips. It’s pretty much the best and super duper low maintenance.

Ten Minute Tostadas

10 Minute Tuna Tostadas are a seriously lifesaving lunch or dinner using pantry staple tuna as the base and then throwing in some spices, cheese, and whatever chopped veggies you have on hand!


Ingredients

Scale
  • 4 tostada shells
  • 1 can tuna
  • 3 tablespoons plain greek yogurt
  • ¼ cup red pepper, diced
  • ¼ cup yellow onion, diced
  • ¼ teaspoon cumin (affiliate)
  • ½ teaspoon salt (less if your tuna is high sodium)
  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar cheese
  • ½ of an avocado, chopped
  • ¼ cup cilantro, chopped
  • 1 lime, cut into wedges
  • sour cream for dollops

Instructions

  1. Preheat oven to 425 degrees.
  2. Combine tuna, yogurt, red pepper, onion, cumin,  salt, and black pepper. Mix.
  3. Spoon tuna mixture onto 4 tostadas, spreading almost to edges.
  4. Sprinkle with cheddar cheese.
  5. Bake at 425 degrees for 10 minutes or until cheese is melted.
  6. Serve with avocado, cilantro, lime, and sour cream.
