Buttery Popcorn Cookies

Everyone knows that popcorn and cookies go perfectly together. A sweet cookie in the left hand while your right hand reaches into the buttery popcorn bag coated with way too much salt for any sane person. Sounds like a great snack to me, but the only problem is, what if you’re that person that doesn’t want to go to the trouble of making two snacks to bring to game night, but still craves the sweet and salty combo of popcorn and cookies. That’s totally me.

Kev and I have really fallen in love with our neighborhood since we’ve moved and have adopted a few places around us as our own. One place that you’ll find me at a few times a week is a coffee shop and wine bar called Opa. It has more seating than you’ll find anywhere, but yet it’s so cozy and intimate and Austin-y. I usually try to sit outside under a huge, sprawling tree that practically covers the entire coffee shop. Trees are thing down here in Austin; they’re all so crazy with their knotty trunks and curly twisted branches that start at your house and seem to cover at least 3 more houses down the street.

Another place we find ourselves at quite often is our neighborhood library. I used to read a book a day as a kid and then through high school and college only did my required reading (if that!). I’ve gotten back into it and usually get through a fiction book every few weeks as well as a couple of cookbooks and some other non-fiction. This week I picked up 3 cookbooks: Deb Perelman’s Smitten Kitchen cookbook, Christina Tosi’s Milk Bar Life, and The Portlandia Cookbook (hilarious!!!). Flipping through the pages, I found Deb’s recipe for these Buttery Popcorn Cookies and knew that was my snack solution.

When you only have to use one hand and you can be eating both a cookie and a handful of popcorn, it’s a successful snack.

Ingredients

  • 2 tablespoons vegetable oil
  • 1/4 cup popcorn kernels
  • 1/4 teaspoon table salt
  • 1 tablespoon butter (affiliate), melted
  • 1/2 cup butter (affiliate), softened
  • 1/2 cup packed brown sugar (affiliate)
  • 1/3 cup white sugar
  • 1 egg
  • 1/2 teaspoon vanilla (affiliate) extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat oven to 350 degrees.
  2. Start by popping your popcorn by heating vegetable oil in large pot over the stove. Add popcorn kernels and place lid on pot. Once popcorn starts to pop, gently shake pot to keep kernels from burning. After all kernels have popped, drizzle with melted better and sprinkle with table salt. Pick out all unpopped kernels and set aside.
  3. To make cookies, cream butter and sugars together until smooth.
  4. Add egg and vanilla and combine.
  5. Add flour and baking soda and stir just until flour is combined.
  6. Stir in popped popcorn until it is as incorporated as possible.
  7. Use cookie scoop or form a ball with your hands, about 2 inches in diameter.
  8. Place cookies onto greased baking sheet and bake for 8-10 minutes.
  9. Remove to baking rack to cool.
