Yesterday was one of those days where I really needed to be testing and shooting a few recipes I have in the queue, but I just couldn’t make myself do anything I actually needed to be doing. We had yet another hang-up in the fostering process, pushing our licensing out another 72 hours, which in reality isn’t long but after 2 years of this, it feels like a century. We’re at the point now where I compare it to being pregnant and you see your due date come and go and know that eventually you WILL end up with a baby but every extra second, minute, hour, day feels like a lifetime.

We actually booked plane tickets to Minneapolis a few months ago with the hopes of canceling them or bringing a foster kiddo with us, but with this latest hang-up, our agency told us to go, enjoy our trip, and then come back ready to welcome a new member to the family. So, we’re headed off to visit friends and family and trying our best to enjoy this time before we have a little in tow!

So, that’s why I just couldn’t make myself do anything yesterday. Well, when I say anything, I mean recipes that I actually should be making. These wrinkly crinkly chocolate chip cookies were obviously not made in the pressure cooker but sometimes you gotta take a break from the norm. I had been wanting to try these cookies that took the internet by storm a few months back, and so I pulled out the KitchenAid and got to work!

Albs is never far when butter, sugar, and flour is involved, so it was no surprise that he insisted on sitting as close to my cookie shoot as possible! I have to say, these cookies are completely amazing. They’re thin, but have so many crispy and chewy edges due to banging your baking pans against the oven racks. I didn’t want mine to run together, so I could only bake 2 cookies at one time (which is really like 6 normal sized cookies).
