Vanilla Pound Cake with Fresh Peaches & Blueberries

Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup sour cream or greek yogurt
  • 1 tablespoon vanilla (affiliate) extract
  • 1/2 cup canola oil (affiliate)
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large fresh peaches, sliced
  • 1 cup fresh blueberries
  • *optional whipped cream

Instructions

  1. Preheat oven to 350 degrees and prepare loaf pan by spraying with cooking spray then coating the bottom and edges with all purpose flour. Shake excess flour out.
  2. In medium sized mixing bowl, whisk together eggs, sugar, sour cream, and vanilla.
  3. Slowly pour in oil, whisking until completely incorporated.
  4. Add flour, baking powder, and salt and stir just until combined. It will be lumpy – don’t over-mix!
  5. Pour batter into prepared loaf pan and bake for 40-50 minutes or until toothpick inserted in the center of the loaf comes out clean.
  6. Let cool on wire baking rack, then slice and serve with sliced peaches, blueberries and whipped cream.
