Ingredients

- 1 lb bacon
- 1 cup onion
- 2 large carrots
- 2 cloves garlic
- 8 cups chicken broth (affiliate)
- 2 cans cannellini or great northern beans
- ½ teaspoon thyme
- 1 teaspoon rosemary
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup half and half
Instructions
- Chop bacon into ½ inch pieces and fry until crispy in large stockpot. Remove bacon and leave ¼ cup bacon grease in the pot.
- Add chopped onion, chopped carrots, and minced garlic to pot. Saute on medium heat until veggies are soft. Add chicken broth. Bring to a boil.
- Drain beans and add to stock pot along with all spices. Add half and half and add bacon back into pot. Stir and serve immediately!
