- 20 tablespoons unsalted butter (affiliate), softened (2 1/2 sticks)
- 1 1/3 cups sugar
- 2/3 cup packed brown sugar (affiliate)
- 2 eggs
- 1/2 teaspoon vanilla (affiliate)
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1 cup chopped pistachio nuts
- 1 cup coarsely chopped white chocolate bits
Instructions
- Preheat oven to 350 degrees.
- Cream softened butter and sugar together until smooth.
- Add in eggs, one at a time, beating well after each egg.
- Add vanilla, mix.
- Add flour, baking soda, and salt, and mix until just combined. Be careful not to over-mix.
- Stir in nuts and white chocolate until combined.
- Use cookie scoop or your hands to form a 1 inch cookie dough ball and then place on a greased baking sheet or a baking sheet covered in parchment paper.
- Bake for 8-10 minutes until edges are brown and middle is still a little soft in the middle.
- Let cool on wire cooling rack.
