White Chocolate Pistachio Cookies

  • 20 tablespoons unsalted butter (affiliate), softened (2 1/2 sticks)
  • 1 1/3 cups sugar
  • 2/3 cup packed brown sugar (affiliate)
  • 2 eggs
  • 1/2 teaspoon vanilla (affiliate)
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 cup chopped pistachio nuts
  • 1 cup coarsely chopped white chocolate bits

Instructions

  1. Preheat oven to 350 degrees.
  2. Cream softened butter and sugar together until smooth.
  3. Add in eggs, one at a time, beating well after each egg.
  4. Add vanilla, mix.
  5. Add flour, baking soda, and salt, and mix until just combined. Be careful not to over-mix.
  6. Stir in nuts and white chocolate until combined.
  7. Use cookie scoop or your hands to form a 1 inch cookie dough ball and then place on a greased baking sheet or a baking sheet covered in parchment paper.
  8. Bake for 8-10 minutes until edges are brown and middle is still a little soft in the middle.
  9. Let cool on wire cooling rack.
