You know those Mondays when you come back from a weekend away where all you did was indulge your every culinary whim and now you could practically kill for a bite of something green? This was my life yesterday. Kev and I spent this past weekend at our church retreat where we ate at 8:15, 12:15, and 5:15, not to mention snacks between all those times. Breakfast, snack, play a game, snack, go down the tubing hill, snack, lunch, snack, crochet, snack, snuggle babies, snack, more games, snack, dinner, snack,…. you get the point.
Needless to say, we needed a salad. Bad.
There’s absolutely nothing challenging about making this salad. There are only 8 ingredients and the only skills required of you are to thinly slice the jalapenos, be able to open bags, and measure (sort of).
Crazy enough, Sir Percival has a liking for veggies. We recently caught him with a paw in a saucepan of broccoli. Nothing’s safe around here!
Cat owner PSA: I did read that felines do sometimes get cravings for greens. If this happens, you may find them chomping away on your house plants or something of the sort. To solve the problem, steam them a little broccoli to satisfy their craving. This trick also aids in digestive problems if that seems to be an issue!
This is a perfect lunch to mix up in 5 minutes, dish into containers for work, and you’re set for the week!
