This beautiful flavor filled pressure cooker kale & quinoa salad with zingy avocado sauce will have your taste buds dancing away.
Happy Friday friends! I’m gonna kick off this recipe by admitting that it’s not the most summery looking. It’s getting me all excited for fall, so I’m just going to pretend that that’s where we’re at already. It has an amazing combination of ingredients, some inherently summery (avocados) and some that make me think of fall/winter (cranberries). There’s no food police around here though, right?? We make what we want! 🙂
This is another recipe from Cookie and Kate, but this time I’ve adapted it for the pressure cooking loving folks. If you don’t have a pressure cooker, you can cook your quinoa according to package directions and roast your sweet potatoes. If you are using your pressure cooker, your time might vary between 2 & 5 minutes under high pressure, depending on how soft you like your potatoes. I cooked mine for 5 originally and it overcooked the potatoes a bit, so 3 seems to be the better choice unless you like your potatoes mushy.

Ingredients
Quinoa & Sweet Potatoes
- 1 cup quinoa (affiliate)
- 1 large sweet potato, sliced into small cubes
- 1 1/2 cups chicken broth (affiliate)
- ½ teaspoon salt
Kale
- 2 tablespoons olive oil (affiliate)
- 1 bunch kale, ribs removed and chopped into very small, bite-sized pieces
- 1½ teaspoons salt
Sauce
- 2 avocados
- 1 large lime, juiced
- 2 tablespoons olive oil (affiliate)
- 1 medium jalapeño, deseeded, membranes removed and roughly chopped
- 1 handful cilantro leaves
- Salt, to taste
Additional Toppings
- ⅓ cup crumbled feta
- 1/4 cup dried cranberries
Instructions
- In the pressure cooker, combine quinoa, sweet potato, chicken broth, and salt. Cook at high pressure for 3 minutes with a quick release.
- While quinoa is cooking, massage kale with olive oil and salt using your hands. Set aside.
- Combine all ingredients for sauce in blender or food processor and puree until smooth.
- Layer kale with sweet potatoes, quinoa, feta, dried cranberries, and top with avocado sauce.
