Apple Chia Overnight Oats are a big hit with my whole family! Mix them up in 5 minutes on Sunday night and breakfast is ready for the week!
I’m going to cut to the chase. Oatmeal is towards the bottom of the list for me in terms of favorite breakfasts. Give me a hearty breakfast taco or a giant sweeter than sweet cinnamon roll or even a basic fried egg any day, but oatmeal…. meh.
I stumbled onto a basic overnight oats recipes a few years ago and decided, “Hey! That’s not half bad!” Not half bad turned into mildly ok, which turned into, I think I actually WANT overnight oats for breakfast tomorrow. Definite improvement there!
The past few months I’ve been adding chia seeds to my overnight oats recipes to mix up the texture and taste. When the chia seeds sit in the milk overnight, they have enough time to bloom which makes them easier to eat and digest! And, they’re just a fun texture that reminds me of having a boba tea with the jelly pearls.
The possibilities for overnight oats mix-ins are limitless, but this is one of my favorite basic combinations for Fall! Fresh, juicy, crisp apples that are in season and just the best, aren’t they?? Answer: YES! So, chop one up and throw it on top of your creamy overnight oats for some crunch, tang, and sweet.
My #1 tip when making these Apple Chia Overnight Oats is to double or triple it, depending on the size of your family. It keeps really well in the fridge for the week, so you can make it Sunday night and have breakfast ready for the whole week. It’ll fill your tummy up and give lots of energy to you and your kids throughout the whole morning! Enjoy!
