Let’s talk breakfast, shall we? My breakfast preferences have evolved over the years and my current breakfast routine would have caused me to do a double take a few years ago. I used to do a quick grab a granola bar situation or have a bowl of cereal or toast, but now with kids, and staying home everyday with kids, we stretch e.v.e.r.y.t.h.i.n.g out. Everything can be made into an event because we have 12 hours to fill in a day and every minute counts.

So, with that being said, I normally make some sort of breakfast everyday. Some days it’s just scrambled eggs and toast, some days it’s muffins, and some days it’s a batch of these pancakes made from DIY Pancake Mix!

Growing up we had pancakes a fair amount and I don’t remember ever using a boxed mix. Maybe we did, but most of the time I think they were from scratch. So, whenever I had bisquick or whatever other popular mix brand was out there, they always tasted so fake to me! So, I’ve just always made ours from scratch. It doesn’t take a ton of time anyways, but having to get out all the dry ingredients every morning while your 2 year old has the morning HANGRY behavior isn’t always ideal.

For awhile I was using Kodiak Cakes mix and still love their company dearly, but making our own has been even easier and cheaper. And, when I run out, we always have the basic ingredients on hand.

Let’s talk about what my perfect pancake is.

#1. It’s fluffy. My husband informed me last week that he likes thin floppy cakes, almost crepe like, but nope, not me. I’m all for the thick and airy ones.

#2. It tastes like something. This is why homemade is the best. It has real ingredients, no preservatives, and has all the right flavors that a pancake should have.

#3. It’s lightly crisped on the edges (thank you butter), but still soft and fluffed in the middle.

Ok, so now that we know what makes a perfect pancake, let’s talk about this specific mix. The dry part has 5 pantry ingredients that get whisked together, and then when you’re ready to make a batch of perfect cakes, you add milk, egg, butter, and optional vanilla. So convenient and so delicious!

Pancake Mix Ingredients

  • 6 cups flour (I use 4 cups all-purpose and 2 cups whole wheat)
  • ⅓ cup granulated sugar
  • 3 tablespoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons kosher salt

To Make The Pancakes

  • 1 cup pancake mix
  • ¾ cup milk or 1 cup whey/buttermilk
  • 1 egg
  • 1 tablespoon butter (affiliate) or coconut oil (affiliate)
  • 1 teaspoon vanilla (affiliate) *optional, but tasty!

Instructions

  1. Whisk together all dry ingredients and place in a canister or sealed container for later use. Store up to 6 months in a cool, dry place.
  2. On pancake day, whisk together 1 cup pancake mix, milk, egg, butter or oil, and vanilla.
  3. Use a ⅓ cup measuring cup to drop onto a greased griddle or skillet.
  4. Brown on both sides and serve topped with your favorite syrups, chopped fruit, nuts, yogurt, or whatever your heart desires!
