So, I kinda have this person in my life that I rely on for most everything. He’s my nighttime cat wrangler, my sit on the couch and watch 24 youtube clips with (that I think are hysterical) guy, my chief taco eater, my person that turns our bedroom light off every night, my bread baker, my concert/restaurant/movie buddy, my chief dishwasher, my jar opener, my tennis partner, and my biggest fan and encourager. I literally don’t know another person who would be so supportive of me giving my life to this blog, trying to make it work, while he deals with irregular income streams and piles of dirty dishes day after day without complaint.

Today is our 3rd wedding anniversary and he asked me last night, “Do you feel like it’s been 3 years already?” Almost immediately I answered ,“Yes! It’s actually felt a lot longer! “ That might come across as a bad thing to you, but it’s quite the opposite for me! It’s been 3 years of marriage and 4 years of dating before that, and I don’t know, I kind of thought we’d still be figuring this whole marriage thing out (which we definitely are at times, don’t get me wrong), but as a whole it just feels right and good and meant to be, in the least cheesy sense of the word. Anyways, he’s my person and I love him!

There are a few levels of love I have in my life. The top level is for God, the 2nd level is for Kev, and the 3rd level is for tacos. There are some other people mixed in there as well, but tacos definitely stand firm in 3rd place 😉

We just finished up a solid week of eating only tacos (which I talked about in a previous post), and these AMAZING Huevos Rancheros Tacos were birthed during that time. They’re awesome anytime of day and are best enjoyed across from somebody else, so you can stare at each other as the runny egg yolk runs down both your chins but you don’t even care because you can’t stop eating long enough to wipe it up. Haha – such a romantically awkward moment. Between you and the taco of course…

Okay, so when should you make these? Now.

How do you make them? Skillet, BACON, veggies, egg, hot sauce, salsa, DEVOUR!

Why should you make them? I’m not going to answer that question…I dare you to stare at the pictures for more than 10 seconds and I don’t think you’ll need much convincing.

Who should make them? YOU! Anybody!! They’re seriously a breeze to make. If you can handle a little chopping and little frying, you got this.

Huevos Rancheros Breakfast Tacos

Ingredients

Scale
  • 1/2 lb regular pork sausage
  • 1 teaspoon cumin (affiliate)
  • 4 eggs
  • 4 tortillas (I prefer a corn/flour mixture)
  • 12 cherry tomatoes, sliced in half
  • 1/4 cup salsa (affiliate)
  • 1/4 cup chopped cilantro
  • 1/4 cup queso fresco, crumbled
  • hot sauce

Instructions

  1. In medium skillet over medium high heat, crumble and cook sausage until there is no more pink. Sprinkle with cumin, and cook for a minute or so more.
  2. Remove sausage from skillet and fry 4 eggs in the same skillet until they are cooked to your preferred doneness. (I prefer the yolks still runny).
  3. Assemble taco by layering sausage, egg, cherry tomatoes, cilantro, queso fresco, salsa, and a few drops of hot sauce in a tortilla.
  4. Devour!
