Pressure Cooker Banana French Toast Oats

Steel cut oats have to be one of the most versatile breakfasts, especially to make in your pressure cooker! These banana french toast oats are made sweet with just bananas and honey and are made to taste like everyone’s favorite breakfast food, french toast!!

Before I became a mom, I was cooking 1-2 NEW recipes per day, and was having a hard time understanding people who could barely manage to get dinner on the table, let alone a dinner that wasn’t the same thing they ate 3 times the previous week. Goodness do I get it now! I mean, how are we supposed to do it all? Provide stimulating activities for the toddler, keep the baby fed, in a fresh diaper, and relatively well rested, maintain a proper naptime/mealtime schedule, have ample outdoor time, take them to the library for storytimes, get them dressed and off to daycare, then work, clean, do the dishes, yard work, AND get meals on the table. Whew! I’m just tired thinking about it all.

More often than not, breakfast seems to be our default choice for those nights were cooking is just too hard. Prep Dish comes in at a close second, but that’s a topic for another day!

I came up with this recipe for pressure cooker banana french toast oats while craving sweets, but at the same time avoiding specifically processed sugar. It completely satisfies me, as someone who doesn’t even love oatmeal a whole lot, and is filling and nutritious for my toddler as well. “Real” french toast can be a bit much on the bread/sugar side of things, so making a pseudo french toast is a healthier option, especially when you’re dealing with a breakfast for dinner situation!

This oatmeal is a great dairy free option – you can substitute almond milk, coconut milk, or just leave the milk out all together. And, if you’re not a banana fan, choose another fruit! I think peaches or mango would be great options.

Ingredients

Scale
  • 1 cup steel cut oats (affiliate)
  • 1 banana, sliced
  • 1 teaspoon cinnamon (affiliate)
  • 1/2 teaspoon vanilla (affiliate)
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 tablespoon butter
  • 1 cup milk (almond or dairy)
  • 1 cup water
  • 1/4 cup toasted walnuts (affiliate)
  • or pecans
  • Honey (affiliate) for drizzling

Instructions

  1. Combine all ingredients in pressure cooker except for nuts and honey.
  2. Stir lock lid, and set to high pressure for 15 minutes.
  3. When time is up, let pressure naturally release for 10 minutes then do a quick release for all remaining pressure.
  4. Ladle into bowls and top with nuts and drizzle with honey.
