Pressure Cooker Caribbean Chicken and Rice Bowl with pineapple, red pepper, and cilantro is sweet and spicy with a taste of island life!
These PC Caribbean Chicken and Rice and everything else bowls are out of this world good. I’ve been on such a taco kick and everything tex-mex that I forgot for a few seconds about all other kinds of food!
This bowl was created by me sitting down at the kitchen table with a notepad and a pen with frequent trips to the pantry and fridge to figure out what ingredients I was working with. I knew I wanted to post an ultra easy, cook it all at once chicken and rice bowl situation but past that I didn’t have a clear idea of the plan.
If I had to describe the theme of my cooking, it would be summed up by that previous sentence. I always have a rough (I’m talking super rough) idea of what I want to make and then the recipe is actually born out of what we happen to have on hand for the day.
These bowls remind me of our honeymoon in Puerto Rico! Not technically in the Caribbean, (I don’t think?), but they’ve got that island flare with the fresh pineapple and shreds of coconut. While we’re on the note of pineapple, please use fresh in this recipe! I know canned pineapple is way too convenient, but the flavor just doesn’t compare. And, when you’re not cooking it into the sauce but just eating it mixed in, you can really taste the difference.
These bowls are the ultimate pressure cooker meal because you can cook the chicken and rice together, chop your veggies while that’s happening, then everything is ready to go! Guess what? You can also use frozen chicken breasts – it truly doesn’t get any more simple than that!
