Pressure Cooker Vegetarian Red Beans and Rice is a dump and eat kind of dinner! There’s no need to soak the beans ahead of time, so everything gets thrown into your pressure cooker and comes out piping hot 90 minutes later!
I am by NO MEANS a red beans and rice expert, but since we now live in Texas and Texas touches Louisiana in one small corner, I figured it was time to see what all the red beans and rice fuss was about!
We start this classic recipe with the Holy Trinity of cajun food: onion, bell pepper, and celery. Then, the flavors keep layering on top of each other! Garlic, thyme, oregano, spicy cayenne, and red beans (kidney beans) all mesh together within the magic of the pressure cooker, and 90 minutes later you have a piping hot, cozy, spicy, healthy, cheap, AMAZING bowl of Pressure Cooker Vegetarian Red Beans and Rice!

Thanks for posting this! Made this in my Instant Pot last night. Good flavors, but ended up with a lot of excess liquid. The beans were cooked but still a bit al dente…will try this again with 4 cups of broth and maybe another 15 minutes of pressure cooking time.
