I’m going to whisper this very softly, because well, I live in Texas, and we all know that summer doesn’t actually end until December 23rd, but I’m still going to whispershout that I felt a cool breeze today.

Yes, it was still 96 degrees with 97% humidity, but I did feel a cool breeze for 5 seconds. This can mean nothing else but fall is coming. Fall, people!! The season of soups, blankets, and all things Instant Pot.

My pressure cookers have been running at half speed this summer since we’ve been doing a lot of grilling, but the past few weeks they’ve started to crawl out of hibernation. Desserts are one of the lesser known categories to use your pressure cooker for, but when you find a good one, it’s a home run!

In the past, I’ve loved making cheesecakes, lava cakes, puddings, and now I’m in love with these Pressure Cooker Mini Apple Crisps made INSIDE the apple. It’s our new special fall dessert that you better believe I’ll be making when YOU come over for dinner.

Mini Apple Crisps with ice cream and pecans

I use corn syrup in this recipe because it works perfectly in both the caramely sauce as well as the sweetness, and a binding agent in the streusel topping. The texture of the syrup is always smooth and amazing and lets the true flavor of the rest of the ingredients shine through without overpowering. It’s a win win in my book!

These Pressure Cooker Mini Apple Crisps may look a bit fancy, but really they’re so easy! I cut off the tops of the apples, scoop out the interior with a grapefruit spoon or a paring knife, spoon a buttery sugar sauce into the apple, then add the streusel topping and “bake” in my pressure cooker.

After the 3 minutes of cook time is up, you can throw them into your oven on broil to crisp up the tops, or, if you have an air fryer, those work great for this purpose as well!

One word of caution, when using the corn syrup in the streusel topping, it will create what seems to be a delicious oatmeal cookie dough that will be extremely tempting to eat.

If you feel like you’re a person who will be unable to resist eating the aforementioned item, I suggest making a double batch of the crumble. Another word to the wise, this recipe may infect you with the baking bug.

Side effects may include: needing to bake anything from delicious marshmallows, fudges, caramels, pies and scotcheroos to sticky cinnamon rolls, sauces and glazes. Just remember – you were warned.

Ingredients

Scale
  • 4 large apples (I use honeycrisp or gala)
  • 2 tablespoons butter (affiliate)
  • 2 tablespoons corn syrup
  • 1/4 teaspoon cinnamon (affiliate)
  • 1/4 teaspoon nutmeg
  • Pinch of salt

Crumble Topping

  • 1/4 cup flour
  • 1/4 cup oats
  • 2 tablespoons brown sugar (affiliate)
  • 2 tablespoons corn syrup
  • 1/4 teaspoon cinnamon (affiliate)
  • 2 tablespoons butter (affiliate), chilled and cut into cubes
  • Pinch of salt

Instructions

  1. Prep pressure cooker by adding 1 cup of water to the pot, then placing the trivet inside.
  2. Cut the tops off your apples, then scrape a crater into each apple. I remove all of the core, plus a little. Be careful not to poke through to the bottom of the apple. Pro tip – if you have one, a grapefruit spoon works really well for this!
  3. Put butter, corn syrup, cinnamon, nutmeg, and salt into a small microwave safe dish. Microwave just until butter is melted.
  4. Mix together crumble topping ingredients, cutting in butter until mixture is soft and crumbly.
  5. Spoon 1 tablespoon of sauce into the hole of each apple, then follow with 2 tablespoons of the crumble mixture.
  6. Place the apples onto the trivet inside your pressure cooker. Lock lid and set to high pressure for 3 minutes.
  7. When the time is up, do a quick release, add the remaining crumble topping to the tops of the apples and place under the broiler for 5 minutes, or if you have an air fryer, you can use that!
  8. Serve topped with whipped cream or ice cream.
