Pomegranate and Goat Cheese Salad has all the best festive winter salad ingredients! My favorite way to get greens in this month!
Raise your hand if you love a good salad! Me me me!! Notice, I said a good salad. For me, there has to be more toppings than actual greens, so I’ve got you covered with this scrumptious mix of greens, juicy pomegranate seeds, clementines, goat cheese, toasted pecans, and THE BEST homemade dressing.
If you’re going to try to convince me to eat a salad that consists of 1 type of sorta green lettuce with maybe a few chopped carrots sprinkled on top, I’m sorry, that’s just not going to cut it!
If you’ve never worked with a pomegranate before, let me give you a few tips. They’re a bit messy to deal with, so my first rule of thumb is to wear an apron or a dark shirt! The juice tends to go flying, so you don’t want to wear any light colors.
As for getting the seeds out, I like to cut the pomegranate into quarters, then over a bowl of water, gently start scraping the juicy seeds out of the sections and away from the pulpy flesh.
As the pomegranate arils (seeds) fall into the water, they will sink and the pulp will float. This makes it easy to scoop the pulp off the top once you’re done.
As with every salad, you can vary any of the ingredients! The spring mix could be arugula, baby kale, spinach, raddichio, endive, or any combination of those.
The clementines could be a sectioned juicy grapefruit or a thinly sliced pear or apple!
The goat cheese could be a sharp white cheddar or blue cheese or even parmesan.
The combinations are endless!
In an effort to bring more green into my December menu, this salad will be making its appearance whenever I need a fresh and tasty option!
