And on this week’s installment of food Jessie can’t believes she likes now, we have a cinnamon spiced, fruity delicious bread pudding! I really was one of the pickiest eaters growing up, but bit by bit those things that I never could have stomached before have all suddenly become delectable favorites. Bread pudding quite possibly would have been at the bottom of the bottom, what with being soggy bread and all (10 year old Jessie’s worst nightmare), but times are a’changing. I’m branching out!
Not only is eating bread pudding a completely new experience for me, but making it is a different story! I was starting from scratch here folks. My research started by looking at bread pudding recipes made the conventional method (in the oven), and then I went on to realize that there were hardly any recipes for it using the pressure cooker. Like cheesecake, bread pudding is a very moist dessert, which makes the PC the perfect environment!
It really is a perfect texture that can only be achieved by using the pressure cooker, and uses fairly basic ingredients that you most likely already have on hand. You can sub out either of the fruits if you’d like to add something else. Cranberry and orange would be tasty or just stay simple with a cinnamon and streusel topping!

Instructions
- Whisk together butter, sugar, milk, eggs, vanilla, and salt, then add diced apple and blueberries.
- Gently stir in cubed bread, cover, and let soak for at least 30 minutes or up to an hour.
- Prepare a baking dish that will fit inside your pressure cooker by coating it with cooking spray.
- Place the trivet in the bottom of your pressure cooker, then add 1 cup of water.
- Dump bread pudding mixture into your baking dish (I like to use my small springform pan), then cover with foil.
- Gently lower onto trivet, lock lid, and set to high pressure for 30 minutes.
- When time is up, let pressure naturally release for 5 minutes, then release all remaining pressure.
- Sprinkle 1 tablespoon of sugar on top of bread pudding then put in the oven under the broiler for 5 minutes until the top is crisp.
- Serve!
