If I had my choice, it would be pizza time every day of my life. When people used to ask me what kind of food I could eat every day for the rest of my life and never get tired of, I would answer rice. In my mind, there were so many different kinds of rice that would keep me happy, but I’m not so sure about that answer anymore. Pizza is the new rice for me. Once I started to like cold pizza for breakfast, that was the game changer!
You can’t go wrong with this pizza. It’s just a few simple ingredients and combines the best of the Asian and Italian worlds. I made a pork shoulder at the beginning of the week and it fed us for about 6 meals, with this pizza being the final meal and venezuelan pork arepas kicking it off at the beginning of the week!
March Madness update: KU is still in the tournament and is looking great! It’s a happy time around our house when they’re doing well. When they’re not doing as awesome, well, we eat pizza. Luckily last night this pizza was eaten in celebration and not mourning! Hopefully we don’t have to eat any sympathy pizzas this year…
